Chicken and Green Bean Salad with Zesty Lemon Glaze

I recreated one of my favorite dishes from eatZi’s….Chicken and Green Bean Salad with a delicious lemon dressing! It is so fresh and light and is the perfect summer meal! It’s almost summer, right? 😉 You can eat it as is, or put it on top of some lettuce or pasta if you want something a little heavier.

All you need for this recipe is a bag of fresh green beans, celery, chicken, lemons, and parmesan cheese (optional).

 

Start off by marinating 2 chicken breasts with any kind of italian dressing, salt, pepper, and garlic powder and throw them on the grill. (I made extra).Image

Now, cut the fresh green beans in half and cook until al dente. (About 3 minutes in the microwave). You still want them to be nice and crisp after heating them.

Next, slice up about 6 celery stalks and place in the bowl with the green beans.ImageSlice up the chicken any way you want and add it to the bowl.

Now you just have to make the dressing! You’ll need the juice of three lemons. Thankfully I have a handy dandy lemon juicer!

Next, add either 1/4 to 1/3 cup of olive oil to the lemon juice…it just depends on how citrusy you want the dressing. Add 1 tablespoon of chicken stock and then a dash of salt, pepper, and garlic powder.

And you’re done! Simple as that! Just pour the dressing over the green bean, celery, and chicken mix.

Grate a little parmesan cheese on top….

Recipe:

2 breasts of chicken

12 oz. fresh green beans

6 stalks of celery

1/8 cup grated parmesan cheese (optional)

1 Tbsp chicken stock

Salt

Pepper

Garlic Powder

Juice of 3 lemons
