You’d never know it’s a healthy cookie!
Looking for a dessert but you want something a little healthier? Or how about a spin on breakfast? These cookies can be whatever you want them to be! They make a tasty midnight snack and they’re great to take with you in the morning for breakfast.
Let me tell you the truth about these cookies….if my boyfriend wasn’t a health nut, I probably would have never made them! But they’re awesome so I have him to thank for that!!
All you’ll need is a ripe banana, oats, apple sauce, peanut butter, vanilla, and either dark chocolate chips or blueberries/raspberries. I use dark chocolate chips to keep with the healthy theme if I want something sweet at night. Substitute the chocolate chips with fresh berries such as blueberries or raspberries for the morning!
Start with a ripe banana (the softer the better), and mash it up in a bowl with a fork.
Then add 1/3 cup of applesauce.
Next add a dollop of peanut butter…I tend to estimate! If you want an exact amount, I’d say about 2 tablespoons will do the trick.
Add 1/4-1/2 teaspoon of vanilla.
Add 1/2-3/4 cup of oats and 1/2 cup of dark chocolate chips. Remember, you can also use berries! Mix it up well and place onto a baking sheet and place in a 350 degree oven for approximately 10 minutes.
Cook until golden brown…mine only took about ten minutes but if you like yours more or less crunchy just adjust the cook time! 🙂
