Spinach and Turkey Bacon Omelet

I made this omelet before my morning run and it was oh so divine!

Start by sauteing some spinach in a pan. I just used a handful.

Now, cut up some onions and cook your turkey bacon in the microwave until crisp. Crumble up the bacon after it has cooled.

Saute the onions for 3-4 minutes. Make sure the pan has enough olive oil so the eggs don’t stick later on!

While your veggies are cooking, crack 2 eggs and get them ready to cook! Be sure to add some salt and pepper to flavor them up.

Now place all your veggies and turkey bacon in the same pan and pour the eggs in.

Use a spatula to keep the eggs from sticking to the pan….don’t let the omelet sit too long! Flip after the bottom side is cooked.

ImageCut about 7-8 cherry tomatoes in half (or whatever you have!)

ImageAt this point, your omelet should be finished cooking! I love to add goat cheese or feta cheese to my omelet, so feel free to do so! Top with the cherry tomatoes and there you have it: a magnificent breakfast!

Handful of spinach

3 tbsp chopped onion

Handful cherry tomatoes

2 strips of turkey bacon

2 eggs

Olive Oil

Salt and pepper

Goat cheese/Feta cheese (optional)
