Crispy Baked Chicken & Baked Potatoes!
These chicken crispers are so good! I hate to call them chicken tenders because that makes them sound like fast food…and they’re so much better! As for the potatoes, they’re just the same ole’ regular baked potatoes except for the presentation. My brother and I thought it would be fun to change it up!
Start by washing the baked potatoes and wrapping them in foil. Place in a 400 degree oven and cook until done. Mine took about an hour and a half. If you want to cut down the bake time, cook them in the microwave for three to four minutes before placing them in the oven.
Then cut three raw chicken breasts into slices like chicken tenders. Dredge them in mayo and then coat with your seasoning (Panko bread crumbs, Chili Powder, Garlic Powder, Salt, and Pepper. Bake in the oven at 375 degrees for 30-35 minutes or until golden brown!
While the potatoes finish cooking, grate up about a cup of cheese (I used Colby Jack) and make some bacon to crumble on top of the potatoes.

Don’t cut all the way through the potato, just about three quarters of the way. When they’re done cooking, dress them the way you like and put them back in the oven for two to three minutes to let all the cheese melt and butter soften.

3 chicken breasts
1 1/2 cup Panko bread crumbs
1 tbsp chili powder (more to taste)
1 tbsp garlic powder (more to taste)
1 tsp salt
1 tsp pepper
1/2 cup Mayo
(You can improvise with the amount of seasoning you use!)
