Chicken & Basil Pasta with Cream Sauce
This is such a great recipe because it’s sooooo easy!! I promise. Takes 15-20 minutes tops! Chop up half of a medium onion and 2 cloves of garlic. Go ahead and get the pasta water boiling.
Cook the onion and garlic in 2 tbsp olive oil & 2 tbsp butter for 4-5 minutes.
Pour in 1/2 cup of chicken broth & 2 cups of whipping cream. Let the sauce come to a boil then turn the temperature down to low
Roughly chop up about 1/4-1/2 cup of fresh basil… the more the merrier!
Throw the basil into the sauce & grate 1 cup of parmesan while the pasta finishes cooking.
Add the pasta to the sauce along with another 1/2 cup of chicken broth & all of the parmesan.
I add chicken to this recipe but you can use any kind of meat….or none at all! Shrimp & scallops would both be wonderful.
