Jumbo Flautas

Ahhhhhh, words can’t describe how yummy these are! My recipe made about 5 flautas (enough to feed 2 people), so you may want to double or triple the recipe based off of how many people you’re feeding.

Start by chopping up about 1/3 of an onion, 1/4 of a bell pepper, and a handful or two of spinach. Oh, and some jalapenos….if you dare!

Sauté the onions and bell pepper in 1 tbsp of olive oil. After 3-4 minutes, throw the spinach in and let it wilt. After you’ve taken the pan off the heat, add about 3/4 cup shredded chicken and the jalapenos to the mix!

Grate about 3/4 cup of cheese. I used Colby Jack.

As if one kind of cheese wasn’t enough, you’ll coat 1/2 of the wheat tortilla with goat cheese. Trust me….it’s indescribably delicious! (I used whole wheat tortillas because they tend to become cruchier than a regular flour tortilla.)

Load the tortilla with a little bit of the filling…not too much because you don’t want these to turn out like burritos…just bigger than flautas! It helps if you place the filling on the side of the tortilla without the goat cheese (unlike the picture shows… I learned the hard way) and roll it up from there. The goat cheese will then help the flauta hold its shape.

Place in a 350 degree oven for 10-12 minutes or until cooked through. Then broil on high until the tortillas brown. Keep a close eye on them! They’ll burn before you know it!

I made a little dipping sauce for my flautas while they cooked. For a single serving, use about 2-3 tbsp of sour cream. Add a dash of cumin, paprika, and cayenne. Then add a dash of hot sauce and salsa verde. Simple as that!

Whole Wheat Tortillas

1/3 onion, chopped

1/4 bell pepper, chopped

1 handful spinach

15-20 jalapeno slices, chopped

3/4-1 cup shredded chicken

Goat cheese

3/4 cup Colby Jack cheese

1 tbsp olive oil

Dipping Sauce (for a single serving):

2 tbsp sour cream

Dash cumin

Dash paprika

Dash cayenne

Dash hot sauce

Dash salsa verde
