Pan Seared Tilapia & Oriental Spinach Salad
Summer greens & fresh fish….yummy!!
For the tilapia, melt some butter in a pan or cast iron skillet. Sear on medium-high & turn it down to medium about half way through. I cooked the fish for about 4 minutes on each side. It’s seasoned with Mediterranean sea salt and the juice of one lemon. So easy!
To make the salad, throw in some fresh spinach, 1/2 cup sliced cucumber, 1/2 cup sugar snap peas, 1/4 cup Mandarin oranges, 1/8 cup Marcona Almonds, 1/4 cup cherry tomatoes, & season with salt and pepper.
To make the dressing, combine 1/2 cup rice vinegar, 1/4 cup soy sauce, 3/4 cup olive oil, 2 teaspoons sugar, 1 small garlic clove (crushed), 1/4 tsp ginger, & 1/2 of a fresh squeezed orange.
