Fresh Veggie Shrimp Salad
I didn’t want any kind of chicken or pasta last night…and I wanted something a little lighter and healthier! Fresh veggies and shrimp seemed to be the perfect combination!
In a large bowl, combine equal amounts of broccoli, celery, corn, & cucumber. Add 1/4 of a diced onion, 1/2 of a diced red bell pepper, & one large diced tomato. I used about 1/2 pound of shrimp. Crumble some goat cheese on top. For the sauce, combine 1/3 cup of both olive oil and pesto, a dash of salt & pepper & garlic powder, 4 tablespoons of apple cider vinegar, and 3 tablespoons chicken stock.
This was so incredibly yummy!
