Chicken Souvlaki w/ Tzatziki Sauce
So we had a long day out at the pool yesterday and everyone was exhausted….
and decided we wanted a light dinner!
So, we decided on chicken souvlakis & a greek platter!
There’s a restaurant called Ziziki’s that I absolutely love so I decided to make a copy cat of their chicken souvlaki.
Marinate 4 chicken breasts in italian dressing, dill, fennel, basil, fresh mint, and greek seasoning (if you have it).
Soak the skewers in water for a few minutes so they don’t burn on the grill and then load them with cubed chicken!
Grill until the chicken is almost cooked through…but not quite. Wrap the skewers in foil and let them finish cooking and the chicken will stay juicy.
Sauté a full sliced onion in a pan and if you like sun-dried tomatoes, throw those in there with the onions!
To make the tzatziki sauce, combine 10oz of sour cream & 1/8 cup of lemon juice in a bowl. Add a cup of diced cucumber and 1/4 cup fresh dill. Add 1/2 tsp of salt and 1/4 tsp pepper. Add 1 tsp of red wine vinegar & 3 minced garlic cloves. Add more or less of any depending on your taste! I just messed with the sauce until I liked it!
Serve the chicken over pita bread and drizzle the tzatziki sauce on top!
