Blue Cheese Chips
To make these amazingly delicious blue cheese chips, start by peeling the skin off of 2 potatoes. Using a mandolin or sharp knife, slice the potato into thin slices and soak in water to get rid of the starch.
Heat up some peanut oil in a saucepan and let it get extremely hot. Place 7-8 potato slices in the oil and let them cook until both sides are golden brown.
Place the potato chips on paper towels to get rid of the excess oil, then place them into a large bowl. Once all the chips are done cooking, slice 1/2 of an onion and throw that in the oil.
Wait until the onions have browned and then remove them from the heat and place on a paper towel. Sprinkle the chips with salt, pepper, and garlic powder. Cook 4-5 pieces of bacon until crispy, and break them up into bits. Throw that over the chips along with blue cheese crumbles, goat cheese, and the onions.
And there you have it…deliciousness!
