School is officially in session! Being that today is my first day of grad school, I was determined to spend my last day of summer making a summery recipe! Summer Quinoa it is!
Start by preparing 2 cups of quinoa according to the package. The ratio is 2 cups of water per every cup of quinoa, so you can easily just make 1 cup. I wanted to be able to take left overs to school and work this week so 2 cups of quinoa did the trick.
And a handful of bite-size broccoli (raw).
1/2 cup cherry tomatoes (halved).
3 ears of grilled corn. So delicious!!!
2 tbsp capers.
& mix it up! Mix olive oil and red wine vinegar until it tastes the way you like. Salt and pepper the quinoa & add 1 tsp of Mediterranean Sea Salt.
Add some feta cheese & diced avocado.

1/2 cucumber, diced
Handful raw broccoli
2 tbsp capers
3 ears grilled corn
1/2 cup halved cherry tomatoes
Red Wine Vinegar
1 diced avocado
1 tsp Mediterranean Sea Salt
