Pasta w/ Garlic Oil & Mozzarella Meatballs
Okay, this might be one of my new favorite things!
It is simply Heaven on Earth. I made this for my sweet boyfriend tonight and we both LOVED it.
Start by dicing a whole yellow onion & 4 cloves of garlic.
Pour 2 tbsp of olive oil in a pan and sweat the onions and garlic for minutes or until transparent.
Sauté 2 cups of Bella Mushrooms in another pan with 2 tbsp of olive oil for 7-8 minutes on medium heat.
Next combine a package of Italian ground turkey with one whole egg and 1/4 cup of italian bread crumbs. Mix together and then add half of the onion and garlic mix when it has cooled off.
Cube up 8 pieces of a Mozzarella ball…the cubes should be about 1 inch all the way around. Then coat the turkey meat around the Mozzarella cubes. I have a meatball maker…. sort of like a panini maker but for meatballs….so I didn’t cook these on the stove. But either way will work!
While the meatballs are cooking, boil and salt some water. I used Orecchiette pasta and it was amazing! Dump the whole box in and cook until al dente.
Meanwhile, pour 1/2 cup of olive oil in a sauce pan on low heat. Add 10-12 cloves of garlic and let simmer for 15 minutes or so until the oil is infused.
The meatballs turned out beautifully and were oozing with yummy Mozzarella cheese!
When the pasta is finished cooking, add the onion and garlic mixture, the mushrooms, and two large handfuls of baby spinach to the drained pasta. Add a generous amount of salt and pepper. Serve up the pasta with the meatballs and garnish with fresh chopped basil and grated parmesan cheese.
