15 minute Fajita Chicken Tacos
I haven’t had a lot of time to cook lately because of school and work…but when I do, I love a quick meal.
Start by seasoning 3 chicken breasts with fajita seasoning, salt, pepper, cayenne pepper, and cumin. Grill until cooked through and slice into strips.
Heat 1/4 cup olive oil on the stove on high heat and place one corn tortilla at a time into the oil. Soak one side and immediately flip. If the oil is hot enough, you only need to leave the tortilla on the stove for 8-10 seconds. To cool, put the corn tortilla on a plate with a napkin or paper towel underneath and on top. These tortillas are so yummy!
Sauté some onions…
Dice up an avocado…
& build your tacos! Feta cheese is wonderful on these!
